Country Captain Chicken

3 lb boneless, skinless Chicken breast, cut into pieces
2 cloves garlic
1 tsp salt
2 tsp ground turmeric
1/2 tsp ground black pepper
2 tsp oil
1 large onion, chopped
crushed red chilies to taste
1/2 cup water

Directions

  1. Combine garlic, salt, turmeric and pepper and rub into chicken.
  2. Heat oil in large frying pan and fry onion red chilies until just starting to color.
  3. Add chicken and fry until golden all over.
  4. Add water, cover and simmer gently until chicken is tender.
  5. Uncover and continue to simmer to evaporate excess liquid.
  6. Serve with rice.
